Fume Bistro & Bar Wine List Review

 We have dined at Fume Bistro & Bar in Napa on a few occasions and repeatedly recommended it to others.  This restaurant has a warm ambiance, solid food, and an interesting and well-priced wine list.  In our reviews, we typically don’t review “wines by the glass,” but don’t you miss the days of being able to order a good glass of wine for less than $10 and a bottle for under $40?  Well, you won’t have that conundrum at Fume.   The wine list is small (80 selections) so it changes frequently, but it has a number of limited production wines, and there are always some good deals.

Most of the fruit for Singing comes from the Kremstal, which contributes broad, earthy, lentil-like flavor carried on a gentle cashmere texture. A bit of Weinviertel fruit adds a white pepper note that’s pure spice and no heat, a dash of lift and energy

Winemaker’s Notes: A very attractive fruit bouquet yields apple, peach and citrus aromas along with a typical Veltliner spiciness and a touch of white pepper. The soft and juicy palate is supported by fine acidity. It sings on the palate! Alcohol 12.0%.

89 points Wine Advocate: The 2010 Sauvignon Blanc is a pretty, well-articulated wine that shows the greener, grassier side of Sauvignon. Bright citrus, grapefruit, lime, mint and white flowers emerge from the glass in this focused, energetic Sauvignon. The 2010 was mostly aged in steel, although a small percentage of the wine was aged in foudres. This is a terrific effort from Matanzas Creek. Anticipated maturity: 2012-2014.

Winemaker’s Notes: Translucent, pale straw color. Nose: An intensely perfumed fresh bouquet of bright pink grapefruit and passion fruit combined with tropical notes of pineapple guava. The pear, pineapple and mango characteristics are in harmony with the butter, spice and toasted oak flavors and aromas. The wine is balanced, opulent and has the fruit to make any occasion special. The 2010 exhibits a gorgeous, clear pale color and is defined by an explosion of ripe citrus and floral tones with an oily texture and dense weight that is balanced by mouth-watering acidity. The 2010 exhibits a lot more tropical fruit flavors than its predecessors, mainly due to the colder growing season and the intense maturity of the flavors and acid. With its wonderfully long finish this wine screams for a good food pairing. Enjoy!

Description from K&L: Made from the same excellent fruit that goes into Pahlmeyer’s top-tier Sonoma Coast bottling, just from the barrels that didn’t fit with the style of the grand vin. The 2007 is bright and fresh on the nose and palate with plum, cherry cola and ginger aromas and flavors. The fruit gets a bit darker with air, turning more toward blackberry crumble on the mid-palate, while remaining lively and finesseful.

Winemaker’s Notes: After a wonder 2007 vintage from the Corotto Vineyard the 2008 is no disappointment. Our 2008 Napa Valley Syrah presents rich aromas of black berries, boysenberry, and violets. With flavors of deep black fruit that meld seamlessly with toffee notes, this wine lends itself to a rich, full-bodied mouthfeel. The long, delicious finish is punctuated by beautiful chocolate and baking-spice overtones to a dense fruit core. The fruit was hand-sorted in the field. Fermented by vineyard block in small stainless-steel tanks, it was pressed to 50% new, Burgundian French Oak and aged for eighteen months. 96% Syrah & 4% Petite Syrah.

The Treborce Vineyard is perched at 800′ high atop the eastern hillside in Dry Creek Valley.  This vineyard produces “Classic Zinfandel” with a distinct core of blackberry, white pepper, and dark chocolate.

Winemaker Notes: The Cabernet Sauvignon fruit is grown on our Estate controlled vineyards, in the Oakville AVA, in the heart of the Napa Valley. The Oakville District is renowned for its Cabernet Sauvignon and produces wines that are full, lush and very elegant.

The 2008 Cabernet Sauvignon is big and lush with huge gobs of fruit in the aroma and flavor. The texture of the wine is soft and supple, typical of Cabernet Sauvignons grown in our area of the Oakville AVA.

Like the previous year, 2006 was a long, cool growing season with a late harvest in our Estate Cabernet Sauvignon vineyards. As in 2005 these shallow soiled hillside vineyards were still quite able to produce a small crop of very ripe grapes. The harvest began in the final week of October, but with warmer conditions proceeded at a brisk pace, finishing at the end of the first week of November; a week earlier than in 2005. The wine is a bit more lush, ripe, and fruit forward than its predecessor as a result, and yet still has substantial structure.

Winemaker’s Notes: Our 2007 Silver Oak Alexander Valley Cabernet Sauvignon is a profound, fruit-driven wine from a great California vintage. It has a dark ruby color with a purple edge and an inviting nose of ripe black plum, blackberry, baking spices and soy sauce. On the palate, the wine is rich and full, reminiscent of the flavors of a berry cobbler. It has a long, fruity finish with fine grained tannins, and is a testament to exquisite ripeness at moderate alcohol. With proper cellaring, this wine should give drinking pleasure through 2031. Alcohol 13.9%.
